For this yummy cherry pie, I cheated by NOT using the recipe on my pretty pie plate.
I just picked up a couple cans of cherry pie filling, a ready made pie crust...
set my little pie bird in the middle,
cut in a few slits, then baked.
I use a pie bird to keep the filling in place
and to cut down on sogginess in the crust. A pie bird is a simple
device that can prevent too much steam from building up in your pies.
If there's too much steam, it increases the pressure inside your pie.
All that steam can become too much and will cause your pie to explode.
the last 10-15 minutes, I take the pie out and wrap foil around the crust edge to prevent burning... Then finish baking the remaining time.
It works lovely!!!
Once the pie is baked..
I cool it on a rack with the pie bird still inside...
Once you cut the first piece,
you can then remove your bird easily !!
Ahhh, the perfect pie all the time !!!
did you use comstock filling?? Love that stuff, in fact I made a cherry pie with it for the forth or july, accept, I did break down and make a homemade crust. Ive always wanted a pie bird. I wonder if they make a sweet little bluebird type one?
ReplyDeletehave a sweet day! (dads open heart surgery is this morning... 8:00 am so please keep him in your prayers today.. thank you!)

Yes, that is a perfect pie and I bet yummy too. Clarice
ReplyDeleteI love your pie bird-great colors.!I've never used one, but have always thought about them. I guess when I see them, the colors don't match , or they are not what I would like in styling.
ReplyDeleteYourpie looks delish!...and so simple:)
I go to Trader Joes, get their Morello cherries, drain the juice and make juice for my hubby, then rinse and blot them. And I bake the bottom crust a little in the oven. Also putting egg white will seal the bottom so the juices will not 'sogify'(hahaha) the bottom crust.
I then make cherry tarts out of my Russian tea cake recipe,(if I don't use the freezer or box pie crust like you- which I do do), that calls for only 3 ingredients. Also very simple.
Have a great day!
