Drink Your Pumpkin Pie...

 
So far this week the weather has cooled down a bit. Yet, it still is pretty warm in these parts. We have been looking forward to a change since this Summer has been extremely hot and long to boot...I am so in the mood for sweaters, hot tea, soups...You know...Comfort stuff. I ran across this Pumpkin Frappe recipe on Pinterest the other day. Perfect for getting in the mood for Autumn...yet, cool and refreshing on a warmer Autumn day.

It was quite tasty too. And good for you. It has healthy fat, low carbs, and low calories... So, of course I couldn't keep this to myself. The site I got it from claims it tastes like Starbucks...I couldn't tell you...Since I have never actually had one there. I will definitely try one later though.
Pumpkin Spice Frappe~ With Coffee
Ingredients:
1 1/2 cups coffee, frozen, partially thawed
2 Tbsp. pumpkin, canned
1/2 tsp. vanilla extract
1/4 tsp. pumpkin spice, ground
1 tsp. stevia
1/2 cup unsweetened coconut milk From a carton, not canned
2 tbsp. whip cream, fat free
1 dash cinnamon, ground
Instructions:
1.In a blender add coffee, pumpkin, vanilla, pumpkin spice,
stevia and coconut milk. Blend until smooth.
2.Pour into a glass and top with whip cream and sprinkle of cinnamon.

Pumpkin & Cream Frappe ~No Coffee
 Ingredients:
1 cup unsweetened coconut milk
2 Tbsp. pumpkin, canned (not pumpkin pie)
1/2 tsp. vanilla extract
1/4 tsp. pumpkin spice, ground
1 tsp. stevia
5 ice cubes
2 tbsp. whip cream, fat free
1 dash cinnamon, ground
Directions:
In a blender add coconut milk, pumpkin, vanilla, pumpkin spice,
 stevia and ice cubes. Blend until smooth.
Pour into a glass and top with whip cream and sprinkle of cinnamon.

  3. mmmmmm!! Im loving pumpkin flavors this fall.. I just had a toasted pumpkin spice english muffin (thomas's) with pumpkin spice butter on it! (country crock)...
    mmmmmm!!! with a nice warm cup of tea. I should have had an apple cut up with it.. would have made it all perfect.. tomorrow I will!
