What's For Lunch ???

I decided to bring back some memories of my childhood.
I grew up kinda poor...not poverty but not rich.
Many of our meals were the cheapest you can get.
My Mom, though did her best and always fed us what she could.
Thank God. I'm not sure if it was because she didn't know how to cook, or that's just what she had to work with. We had meals like creamed potatoes and hot dogs, hot dogs and baked beans, hot dogs on buns, tuna casserole, spaghetti, salmon patties, lima bean soup, tuna melts, fish sticks with mac & cheese, and piggies in blankets.

I remember these all too well. Some I even make to this day. I have had to learn to cook on my own for the most part. Sadly my Mom & I didn't spend time in the kitchen much. Maybe I wasn't the interested type or she didn't do that sort of thing. I am really not sure. Gee, Maybe I should ask her. Anyway. If you have followed my blog you know that my little Freckles & I spend quite a bit of time in the kitchen together. A Time I truly am thankful for. She is almost ten and knows more about cooking and baking than I did at her age.

I told her all about the piggies in a blanket...
she thought it sounded kinda neat.
Yeah ( NEAT ) !
We went to the grocery store...
got the stuff .
I showed her what to do... and sure enough she loved the stuff!
Do you remember these as a kid?

And there ya have it...
LUNCH!
I am not sure but the piggy picture above sorta looks
like he's eating piggies in blankets.
The Mother pig looks like she in horror!
Maybe he's eating pig.
Food for thought.
So here ya go...
An oldie recipe to serve your kiddos just like you had 'em!
****
Piggies In Blankets
  • 8 hot dogs
  • Cheddar cheese slices , we used swiss
  • canned crescent rolls, we used butter flavored

Preparation:

Take each hot dog and split it down the middle, lengthwise almost all the way through. Place a long thick cheese slice down the middle.
Separate the crescent dough into triangles and wrap each dog starting with the side opposite the point, starting on one end of the dog and stretching the dough a little to completely cover the hot dog, wrapping the dough around.
Place dogs on a foil lined cookie sheet and bake at 400° for 10-12 minutes or until golden brown.
Serve hot with optional mustard or ketchup.

Enjoy!

  2. I'm like you, I didn't spend time in the kitchen with my mother either. I know the reason for that though, I told my mother I would have a maid to do all that when I got older..sigh. Ya,,ok! lol..I am trying now to do spend time with my daughter in the kitchen and prepare her for when she gets older to make meals for her family. My hubby taught me how to cook, lol.

My husband could eat hot dogs and pork and beans every day if I let him,lol
