Okay...we all get these in our yards...
we mow till our yard looks immaculate and low and behold
the next day there are these pesky little yellow weeds all over the lawn.
Well, you can either spray 'em or weed 'em out and toss it without any thought to it.
Or hey, you can weed them...and eat them......
Yes, eat them...
A couple years ago I posted about these
little flowers and their benefits to your health here.
My newest Bloggy friend from Rosy~Posy did a post on a Dandelion Flower Cookies
a while back....which reminded me of the benefits that dandelions have.
I thought this is the perfect time to try it out since
there are so many dandelions growing all over our neighbors
lawns as well as our own. So Miss Freckles, Missy and I took a
little walk in out Suburban neighborhood
( we don't have any dandelion fields close by)
and picked dandelions from all the yards...
Oh yes we did!!!
It was actually harder then we thought since we live in
a neighborhood where you MUST have your lawns
mowed or you get fined by the HOA...
We picked just enough to make a batch.
We brought them back to inspect them for buggies...
Since we saw Rosy~Posy's kids found a slug in theirs.Sounds crazy I know...
But it was really fun to sort through them and break off all the little Florets.
For this recipe you need to remove the florets from their base.
Hold the florets with one hand and pinch the green
flower base very hard with the other, give a little twist and that should do it.

Dandelion Flower Cookies
1/2 cup oil
1/2 cup honey
2 eggs
1 teaspoon vanilla
1 cup unbleached flour
1 cup dry oatmeal
1/2 cup dandelion florets
1/2 cup oil
1/2 cup honey
2 eggs
1 teaspoon vanilla
1 cup unbleached flour
1 cup dry oatmeal
1/2 cup dandelion florets
Most gardeners detest them,
but the more you try to weed them up,
the faster they grow. So, dear friends...
If you weed 'em I say eat 'em !!!
It is really a benefit!
Happy Friday to you!!!
Wonderful post Mica! I love dandelions. They're flowers too and not the obnoxious weed that people think they are! They are important to our habitats and wildlife. Can anything on earth be more beautiful to a mother than a lovely bouquet of dandelions gripped in a little hand!! xxoo
ReplyDeleteI'm so happy that you tried the cookies. They are delicious aren't they! Plus what can be better than eating the weeds that so many detest instead of poisoning the soil with chemicals to kill them *grin*. I had to chuckle about you mentioning us finding the slug. Hopefully you didn't find any critters in yours :)
ReplyDeleteHave a lovely weekend!
Italians have used the leaf part as salad.
ReplyDeleteI never knew you could make cookies with them. My goodness, that is so cool. hmmmmm.. maybe I will do some baking, lOL
Now this is a way to use weeds xoxoxo Clarice

What a fun post! I sometimes buy dandelion greens in the grocery store. Dandelions bring back childhood memories. I'm going to make some of these cookies. Thanks for sharing! ~ Sarah
