Banana Pineapple Popsicles

We pulled out our Popsicle molds and fruit this week to make a healthy cold treat. I used my canned bananas which I canned this last Winter...(comes in handy when you don't have bananas on hand) and a can of pineapples along with coconut milk, blended it all together, making a very natural tropical Popsicle.

Banana Pineapple Popsicles
****
About four ripe bananas
1 can Dole pineapple with the juice
start blending this mixture while adding vanilla coconut milk until you get a smooth mixture. Pour mixture into Popsicle molds and freeze for about 8 hours.
Enjoy.

These are great snacks. My family loves them. I love the natural taste the best. We'll be spending the remaining Summer making different healthy fruity Popsicles.

We are crossing off some of our Summer Bucket List. Woo Hoo.
Hope your all having a great Summer.

Apples & Banaynays...

I wish I can say I went and picked this big basket of apples...But, I didn't. Yet, a few friends of mine and I are hoping to get to the apple orchard to do so...Hopefully. I just couldn't pass up the price at Fresh And Easy ( a supermarket here). At 49. cents a pound...I bought almost 20 pounds of Galas to make our apple sauce. Then next week I am teaching a few of my friends from church how to make and can apple sauce themselves...I knew that my kitchen would be a very busy place so...I got mine out of the way so I could devote my time to my friends. I love this time of year....makes me think of our wonderful day with my friend Susan who taught me ~n~ Freckles how to make yummy applesauce.

We set up our work stations...cut and cooked down all the apples as Miss Freckles here got to do the funnest part of all. Yup...she got to put all the apples through the food mill. And that's just where all the magic happened. It was glorious I tell you.

Not only did we spend time making applesauce...we also sent banaynays through the food mill and canned them for future use in banana bread and perhaps a shake or too...Why can bananas? Well, it's just fun and in case I don't have a nanners on hand...I know I have some in my cupboard waiting to be used in something.

After that...we didn't stop there....We also made Banana Butter...Yes, Banana Butter. It is cooked down just like jam using banana, pineapple and Marrichino Cherries with a package of liquid pectin. It will be used on toast and scones. We labored for about 5 hours. Then I made a pumpkin roll for our Literary tea. Finished about 10 o'clock at night....getting the last minute details together for the tea...then off to bed.

Canning has brought me joy. I am so thankful to God for these delightful foods in which He provides and makes available for us. It is wonderful knowing my family has some fresh, delicious food in the pantry to last us until next Spring...Then the canning starts again.
Happy Canning.

Banana Bread Trifle.....

Last weekend we were invited to our friends home for a late lunch and fellowship. I brought dessert of course...I just had to share this delightful, refreshing dish...It was a hit!
First you have to make a loaf of banana bread. I couldn't find my banana bread recipe anywhere, so I found this
 Banana Bread recipe
which is pretty close to mine. Let the bread cool...In the meantime you will be preparing the remainder ingredients for the trifle.
I used the Gooseberry Patch 5~ingredient dishes in minutes magazine for the recipe.

I Like To Eat..Eat...Eat...Apples And Bananas....

After getting apples for. 49 cents a pound, bananas for .33 cents a pound and strawberries for less than 1.00 a pound I decided it would be a good time to preserve them by dehydrating them. My sister gave me her old dehydrator which I was ecstatic about by the way. We love dried fruit snacks and this is the perfect way to preserve some of our favorites.

I will admit it is a bit time consuming, to prep, cut, lay out,
and wait for the 7-10 hours to go by before you can enjoy it...
But oh, so well worth the wait.
We seasoned the apples with sugar and Cinnamon yumminess.
 Absolutely delish!

I found myself singing to the Apples & Bananas song by Jack Johnson the whole time I was preparing them. geesh... Every time I see the jar full of goodness I start singing it. It is quite a song that will stick to you.

Oh, and every time we open the jar to eat it ...
The aroma fills the air...

I have a bit more to dehydrate as well as the pears
I bought for .33 cents a pound. What a deal!!!...
I picked up 35 pounds of pears the other day in
which will also be canned this next week...
Yummy!!
If you are interested in preserving fruits there are many
recipes online for using a dehydrator or an oven!

Food For Thought.....

Miss Freckles made breakfast all by herself !
French Toast dipped in banana and pineapple, YUMMY !
She just added a little banana and pineapple puree to
the egg mixture, dipped in the bread than cooked on the griddle!!!
Thank you sweetheart..
.it was a wonderful start to a wonderful day......

 Food For Thought:
Always keep your words soft and sweet -
just in case you have to eat them.

More Food For Thought:
******

TODAY I WILL NOT STRIKE BACK :
If someone is rude, if someone is impatient, if someone is unkind...
I will not respond in a like manner.

TODAY I WILL ASK GOD TO BLESS MY "ENEMY" :
If I come across someone who treats me harshly or unfairly,
I will quietly ask God to bless that individual.
I understand the "enemy" could be a family member, neighbor, or a stranger.

TODAY I WILL BE CAREFUL ABOUT WHAT I SAY :
I will carefully choose and guard my words being certain that I do not spread gossip.

TODAY I WILL FORGIVE :
I will forgive any hurts or injuries that come my way.

Enjoy this Lord's day !
