Baking Peanut Butter Cookies


There is definitely one thing Freckles loves to do and that is baking. As a part of homemaking/kitchen skills, she is learning how to cook and bake different foods. Her favorite is cookies. After dinner, our sweet tooth's were getting the better of us...Freckles suggested baking peanut butter cookies. One thing...We didn't have all the ingredients for a typical peanut butter cookie...So we searched for one with minimal ingredients...and found one that was so easy....It's going to knock your socks off.


 

We have been dabbling a bit in a couple of our vintage cookbooks for recipes, which makes it fun. Things that most Gramma's would have baked in the 1930's~1940's. A good Peanut Butter Cookie would be found in a cookbook back in those days. So, I decided this would also be a great project, since we have been studying the 1940's.
 
 
 

And of course we used our vintage aprons and Pyrex...
We felt as if we were back in time, in a Gramma's kitchen.
 
 
 
 
 
 
 
 
 

The house smelled of comfort....The cookies were beautiful.
 

And they tasted delightful.
It was the perfect opportunity for a wonderful life lesson and bonding
 time between mother and daughter.
These are moments I know we will cherish together.
I love those moments.

Whole Wheat Blueberry Banana Bread....


Hello to all. It has been a month since I have blogged. I've missed ya all....Sorry for the absence. Things have been a bit rocky in life the past four months....Soon to be getting better and back on or feet. We have been staying with my Hubby's brother for the last week to unwind from some personal stresses we have been enduring. It has been a good time to just pray and think about our lives and make plans for the future as the stress level has diminished while being here. Freckles and I had to scope out all the thrift shops in the surrounding area. We found a few things that would fit in well with our future home.

Which inspired a little baking. We came up with a great recipe
 for very moist blueberry banana bread and wanted to share the recipe with ya all.


~Whole Wheat Banana Blueberry Banana Bread~

~3 very ripe bananas
~1/3 C. Greek vanilla or pear or plain Yogurt
 ( I used Chobani Pear)
~1/3 C. melted butter
3/4 C. sugar
~1 egg
~1 tsp. Vanilla ( I used pure vanilla)
~1 tsp. baking soda
~pinch of salt
~ 1 & 1/2 C. Whole Wheat Flour
 ( I used King Arthur's Unbleached Whole Wheat flour)
~1/2 C. fresh blueberries
~A bit of brown sugar for sprinkling top (optional)


~Preheat oven to 350 degrees

~In a large bowl mash bananas, Greek yogurt and melted butter with spoon. Mix in sugar, eggs, and vanilla, sprinkle the baking soda and slat over mixture, blend in. Add flour, mix just enough to blend ingredients in. Lastly add in blueberries, fold in.

~Butter your bread loaf pan, pour in mixture. Bake 1 hour, until butter knife comes out clean. Sprinkle a bit of brown sugar over bread before it cools (optional)

~ Let cool on rack. Remove from pan, slice, serve & enjoy.

Hope you will love it...You won't be sorry, it is very moist and good for you too.

Saturday....


 This morning I tied my apron strings and got busy with keeping the home. I am doing a thorough deep clean before Fall...School starts soon! And we're throwing our daughter a Mad Hatter Tea Party this coming weekend for her 11th birthday. She didn't have a party for her 10th so we are making it up since we won't have another until probably her 13th. Big parties every year wouldn't make things special anyway. Can't wait to show you some of the ides I found for her day! I am also making her gifts!
I made a hearty, country breakfast to get the day going and I was off !
 I love pancakes,scrambled eggs and sausage,YUM!
 
I also love my new apron..I got it for pennies,
 literally..It was $1.00!

Enjoying my new chair.... I sold a few things on Craigs list and Ebay to buy my chair since my old chair was too awkward in that space and starting to rip. It is the cutest find with it's sweet plaid upholstery full of happy colors, jumbo rick rack for whimsy and pockets on each side.
A perfect spot to keep remotes, toys and my Bible for quiet devotions.

Today I swept, vaccumned,scrubbed,mopped,dusted and moved things around for a little change of scenery.Everything smells and feels so Summery fresh!!!
Also enjoying moments with my daughter, reading our vintage childrens books.
 She loves to be read to every night...well, almost every night, when there is time.
And...Playing with dolls. This sweet doll has been with us since Freckles was a baby.
 It is an Anne Geddes Rag Doll. We are also missing our son while he is currently out of the Country on his Mission trip to Czech. We got an e-mail from him the other day which was wonderful and very encouraging. Two more weeks and he will be home! Tonight we prepare for The Lord's Day...Church and fellowship with our Summer internship congrgation and hopping over our friends house afterwards for an overdue visit. hope you all are having a great weekend!
